Abstrak

Flexible packaging industry as a producer of packaging for food and beverages is currently required toensure the safety of packaged food from contamination. As a sense of responsibility, the industry must be able toshow transparently how the food safety assurance has been planned and implemented as well. This can be achievedthrough the implementation of a food safety management system in accordance with international standards that isFood Safety System Certification - FSSC 22000 for food packaging. This standard is a combination of standardInternational Standard Organization - ISO 22000:2018, ISO TS 22002-4:2013, and FSSC Requirements, in whichISO 22000 is supported by Hazard Analysis and Critical Control Point - HACCP Plan, and from GM P (GoodManufacturing Practice) term is supported by ISO TS 22002-4:2013 and FSSC Requirements.The purpose of this study was to analyze the HACCP, determine OPRP (Operational Pre-RequisiteProgram) & CCP (Critical Control Point) and to validate the CCP of printing process, which is one of flexiblepackaging process step. This research takes the case on FSSC 22000 implementation in one flexible packagingindustry in East Jakarta Industrial Estate. Printing process step is chosen in this study because it is one of theimportant process in the manufacture of flexible packaging. As a supporting of the system implementation, GMPrequirements beforehandis comply with reference to ISO TS 22002-4:2013, and FSSC Requirements. While analysisof the HACCP Plan is done in accordance with ISO 22000 to ensure the potential hazard contaminations of theproduct can be prevented / lowered / removed. By analyzing HACCP Plan in the printing process, it can bedetermined the OPRP & CCP of the process. CPP validation process is performed by taking hazard data residualsolvent of food packaging with specification PET // Ink, because residual solvent is one of the chemicals that couldcontaminate the food that comes from flexible packaging.The results of this study indicate that the data residual solvent still valid, reliable, and capable in process,and its value in accordance with customer requirements as well. Furthermore, to ensure the packaging of foodsafety assurance system is consistently implemented, it is necessary to monitor the system by verification of theimplementation of PRP, OPRP, and CCP periodically.
